Teflon, PFOA, and Your Health: What the Research Actually Says

Nonstick pans are one of the most convenient tools in a busy kitchen—food slides off, cleanup takes seconds. If you’ve wondered whether that convenience carries a cost to your health, that’s a fair question to ask. Here’s what the research actually says about Teflon®, the chemicals used to make it, and how to weigh the tradeoffs for your own kitchen.

Is Teflon a PFAS?

Yes—in the way that matters. Teflon is a brand name (owned by Chemours, formerly DuPont) for PTFE, polytetrafluoroethylene, a synthetic fluoropolymer. Fluoropolymers like PTFE belong to the broader family of PFAS—the per- and polyfluoroalkyl substances known as “forever chemicals.” And for decades, traditional Teflon coatings were manufactured using another PFAS, PFOA (perfluorooctanoic acid, sometimes called C8). So when people ask whether Teflon is a “forever chemical,” the accurate answer is that Teflon is a PFAS-based coating that was historically made with PFAS. Newer pans are often labeled “PFOA-free,” which we’ll come back to.

What Is PFOA, and Why Is It the Chemical of Concern?

PFOA is the PFAS compound most closely studied in connection with Teflon. Like other PFAS, it resists breakdown: according to the EPA, PFOA is highly persistent and has been detected both in the environment and in the blood of the general population. For most people, diet is a major source of PFAS body burden, influenced by how food is cooked, processed, and packaged, according to the ATSDR toxicological profile for perfluoroalkyls.

Is Teflon Linked to Cancer and Other Health Effects?

Research has associated PFOA exposure with a range of health concerns, though the strength of the evidence varies by outcome. A few reference points:

How agencies classify it

In 2023, the International Agency for Research on Cancer (IARC), part of the World Health Organization, classified PFOA as a Group 1 carcinogen (carcinogenic to humans) and PFOS as Group 2B (possibly carcinogenic to humans).

What the C8 Science Panel found

The C8 Science Panel—a group of epidemiologists appointed by a court as part of a class-action settlement—reviewed data from tens of thousands of exposed residents and found a “probable link” between PFOA (C8) exposure and six conditions: diagnosed high cholesterol, ulcerative colitis, thyroid disease, testicular cancer, kidney cancer, and pregnancy-induced hypertension.

Animal evidence on PTFE’s building block

Tetrafluoroethylene, the compound used to make PTFE, has been associated with increased liver and kidney cancers and leukemia in rats and mice in published animal studies. How those exposures translate to humans is not clear, and some experts have estimated the risk to consumers as small. It’s worth being precise: much of the strongest evidence concerns PFOA, the chemical historically used to manufacture Teflon, rather than PTFE itself sitting in your pan. That distinction matters for how you weigh the risk.

The DuPont Story: What Came to Light

Much of what the public understands about PFOA emerged through regulatory action and litigation. In December 2005, the EPA settled with DuPont for $16.5 million—a $10.25 million penalty plus $6.25 million for environmental projects, the largest civil administrative penalty the agency had obtained at that point—for failing to report what it knew about PFOA, including evidence that the chemical crossed the placenta from pregnant workers to their babies and was present in the blood of nearby residents (widely reported at the time). Under regulatory pressure, DuPont agreed to phase out PFOA by 2015, and years later the company and its spinoff Chemours settled the multi-district litigation brought by affected Ohio and West Virginia communities for roughly $671 million (2017).

What About the Fumes? Overheating Teflon

At high temperatures—around 500°F (260°C) and above—PTFE coatings can begin to degrade and release fumes. These fumes have been reported to cause temporary flu-like symptoms in people (sometimes called “polymer fume fever”) and can be fatal to pet birds, as covered in reporting such as NPR’s “DuPont Under Fire for Teflon Fumes.” Practical takeaways: don’t preheat an empty nonstick pan, avoid high heat and the broiler with nonstick, and keep birds out of the kitchen.

Are Newer “PFOA-Free” Nonstick Pans Safer?

PFOA has been phased out of U.S. nonstick manufacturing, so most new pans are labeled “PFOA-free.” That’s a real improvement for that one compound—but “PFOA-free” is not the same as “PFAS-free.” PTFE itself is still a fluoropolymer in the PFAS family, and some replacement processing chemicals (such as GenX) have raised their own health and environmental questions. Safer Ways to Cook

If you’d rather sidestep the question altogether, several cookware materials are made without PFAS: cast iron, stainless steel, carbon steel, glass, and enameled cast iron. I love cooking with cast iron—it’s durable, oven-safe, doubles as a serving piece, and needs less oil.
